Gem Lettuce with Crispy Garlic - Yum

Having made it to South Africa with 28kg of presents (and very little clothes), I am now having a relaxing holiday!  Very warm, very good and finally over my cold.
 
So what does a foodie do on holiday?  Well, eat and cook of course.  Yum and I treated myself to some really good bargains from the local Bargain Book Store.  The most interesting is Casa Moro - the Second Cookbook which is a wealth of Spanish and Moroccan food.  Not just the favourites although it does contain a recipe for the addictive Russian Salad but also some lovely unusual contributions.

The Spanish (and the Moroccans for that matter) do some amazing salads and I fell in love with this one which is impressive, tasty and - hurrah - easy!

  • Take 4 gem lettuces, remove any damaged outer leaves, wash and cut into length ways pieces.  They need to look like chicory leaves or scoops rather than diced.  Arrange these on a plate.
  • Roast 3 red bell peppers (or even better buy them or Piquillo peppers already roasted in a jar) and peel and tear into strips before laying them across the lettuce
  • Season with a little salt and pepper and sprinkle on 1.5 tablespoons of good quality red wine vinegar.
  • Peel 4 garlic cloves and chop roughly before warming a 2 tablespoons of extra virgin olive oil in a pan.
  • Once the pan is fairly hot, add the garlic and gently colour.  You want it to go a nice even brown colour but not burn.
  • Spoon this over the salad and then serve immeditately.
So simple, unusual and very good.
